Lebanese pearl couscous is a larger form of couscous, where the grains are the size and shape of small pearls. Couscous is made from durum wheat and is also called moghrabie. Pearl couscous is a basic ingredient just like bulgur and rice, and it is used in all kinds of dishes. Its rich flavor goes well with salads, stews, soups, and as a substitute for pasta. Cook on low heat for 20–25 minutes.
