Green peppers are unripe pepper berries that are harvested first. Black peppers are slightly underripe pepper berries, and white peppers are fully ripe harvested berries. Like with wines, the character of peppers is shaped by growing conditions such as climate and soil. Indian black pepper is considered the highest quality.
