Panko flour is a Japanese version of breadcrumbs. They make it easy to get an incredibly crispy surface on dishes. Panko flour is especially intended for breading and coating. Compared to traditional breadcrumbs, panko flour is lighter in color, coarser in texture, and larger in size. Japanese \"miracle flours\" also absorb less oil when frying than regular breadcrumbs, and for this reason, the result becomes airier, lighter, and crispier than when using traditional breadcrumbs. Panko can be used to coat meats, fish, and vegetables, as well as the surfaces of casseroles and gratins. For example, macaroni casserole gets an irresistibly crispy surface, and it works equally well as a topping for traditional Christmas rutabaga and carrot casseroles.
