Gelatin is the most commonly used gelling agent. Dr. Oetker Organic Gelatin Sheets are made from organic pig skin. The gelatin sheets are first softened in cold water. Excess liquid is squeezed out of them and they are mixed into the hot liquid to be set. The softened gelatin sheets can also be heated in a small amount of water in the microwave and added to the liquid to be set after heating. Gelation takes about 4 hours in the refrigerator and the jelly becomes firmer over time.
